- Pasta of your choice160 g
- garlic clove2 unit(s)
- Wash the red pepper, dry it and take it to the stove on medium heat until all its skin is dark (yes, right on the stove, without a pan or anything, be careful not to burn yourself like me lol).
- Turn off the heat and take the peppers to a bowl with a lid that seals the air well. Leave it there for about 10 minutes.
- After 10 minutes, open the bowl and remove the peppers. Now you are going to remove all the black shell, just swipe it with your finger and it will come off easily.
- In a food processor or blender, add the peeled peppers, basil, lemon juice, olive oil, garlic and seasonings to taste, blend everything until it forms a paste (if necessary add more oil or lemon juice to blend ).
- Cook your pasta and reserve some of the cooking water, drain and return it to the pan.
- In the pan over low heat, add the pepper pesto, a little of the cooking water (little by little so it doesn't get too liquid) and stir until the sauce is incorporated into the pasta.
- Serve with fresh herbs and grated Parmesan (optional) to make it even tastier!
