- Onion1/2 unit(s)
- White wine1/2 cup
- Vegetable broth2 l
- Arborio rice3 cup
- Leek cut into strips1 unit(s)
- Parsley to taste
- Grated Parmesan1 cup
- Rosemary to taste
- Salt to taste
- Black pepper to taste
- In a wide-bottomed pan, heat a spoonful of butter and sauté the onion and leek until the onion is almost invisible.
- Add the rice and toast until the grains are well coated in butter, then add the white wine and let it dry completely.
- Add the vegetable broth one ladle at a time, stirring constantly. Do this process successively until the rice is al dente. Hit the salt and pepper and add the green seasonings.
- Remove the pan from the heat and finish with the remaining butter and parmesan, stirring until incorporated.
- Serve immediately.
