- Ripe tomatoes3 kg
- Onion2 unit(s)
- Coarsely chopped garlic cloves4 unit(s)
- Basil sprigs5 unit(s)
- Olive oil5 tablespoon
- Salt and pepper to taste
- Cut the tomatoes in half, removing the stem.
- Distribute them in a form lined with aluminum foil.
- Distribute the onions, garlic cloves and sprigs over the tomatoes.
- Drizzle with olive oil and take it to the medium oven (180oC) without covering.
- When they are soft, discard the basil sprigs and remove the skins from the tomatoes.
- It takes a lot of work to remove the skins, if you want to keep it, you can too.
- Put everything in a blender, including the roasted onions and garlic.
- Whisk well until completely smooth. Place the blended liquid in a pan to reduce a little.
- Portion in small amounts and place in the freezer. To defrost, heat in a pan with a little water.
