- Start by peeling the shrimp. Reserve the skins and head for the broth (the recipe is in my tips) Place the strained shrimp broth in a pan and keep warm. Season the shrimp with salt and pepper. Reserve For the squid: put a liter of water to boil and add the cloves, onion, bay leaves and salt to taste. Bring to a boil. Add the squid and cook for 40 minutes over medium heat. Strain and remove the onion, the clove is the bay leaf. Reserve In a skillet, sauté the chopped onion and celery in olive oil. For 3 minutes. Add the rice and sauté for another 2 minutes. Add the wine and let it evaporate. Now add 1 cup of very hot shrimp and mix. Always cooking on medium heat. Add the squid and add another cup of the broth. Let it reduce. Add another cup of broth. Adjust salt and pepper. Add the prawns and mix well. Cook for another 4 minutes and finish with olive oil, lemon zest and chopped parsley. And good appetite 😋😋
