- Shrimp peeled and cleaned200 g
- Arborio rice1 cup
- Dry white wine1/2 cup
- Butter1 tablespoon
- Leek, cut into slices1/2 cup
- Chopped Onion1/4 cup
- Minced garlic1 teaspoon
- Grated Parmesan1/2 cup
- Tahiti lemon zest to taste
- Homemade Shrimp Broth1 l
- Olive oil1 tablespoon
- Sea salt to taste
- Ground black pepper to taste
- Chopped green seasoning to taste
- In a heated pan, add the butter and oil and brown the onion and garlic.
- Add the leek and sauté quickly.
- Add the arborio rice and mix until the grains are well sealed.
- Add the wine and stir until completely evaporated.
- Then add a ladle of hot shrimp broth, salt and keep stirring.
- Repeat the process, adding a ladleful of broth at a time and stirring constantly.
- When the rice is almost cooked add the shrimp and pepper.
- Cook for another 2 minutes, adjust the salt and turn off the heat.
- Finish with the Parmesan, lemon zest and green seasoning.
- Mix everything and serve immediately.
