- shrimp300 g
- Arborio rice300 g
- Olive oil2 tablespoon
- Salt and pepper to taste
- Garlic Clove1 to taste
- Dry white wine0.1 l
- Fish broth2 l
- Grated Parmesan2 tablespoon
- Cold butter2 tablespoon
- Chopped chives to taste
- In a frying pan, put 1 tablespoon of oil and fry the prawns. Season with salt, pepper and set aside.
- In a pan put the rest of the oil and fry the onion, the rice and then add the white white wine, stir until the wine evaporates the alcohol.
- Gradually add the hot broth, stirring constantly. when the rice is soft and with a little liquid, add the cheese and mix until it melts.
- Turn off the heat, add 2/3 of the shrimp, the butter and adjust the salt.
- Finish with the rest of the shrimp and sprinkle with the parsley. Serve next.
