- Egg Yolk3 unit(s)
- Bacon200 g
- Parmesan150 g
- Salt to taste
- Black Pepper to taste
- Cut the Bacon into small cubes and fry in its own fat and set aside.
- Cook the pasta according to the manufacturer's guidelines
- Make a mixture with the cheese and the egg yolks and set aside.
- In the pan where the bacon was fried, add the batter about 30 seconds before the end of cooking.
- With the pan turned off, add the cream of yolks and parmesan and stir quickly so that it emulsifies with the pasta.
- Add a bead of pasta cooking water to make a lighter sauce.
- Add the Bacon and finish with kingdom pepper.
