- Spaghetti (or other long-grain pasta)250 g
- Bacon, diced1/2 cup
- Gems3 unit(s)
- Whole egg1 unit(s)
- Grated Parmesan150 g
- Salt and Black Pepper to taste
- Place a medium pot with 2 liters of water over high heat. When it boils, add 1 tablespoon of salt, add the pasta and mix. Let it cook for the time indicated on the package. (Don't forget to separate 1 cup of the cooking water when you're done as written in Step 4).
- While the pasta is cooking, prepare the other ingredients. In a small bowl, crack one egg at a time and transfer to another bowl (remember: 3 yolks + 1 whole egg) Add the grated Parmesan cheese and beat well with a fork to combine.
- Place a large skillet over medium heat. When hot, brown the bacon for about 5 minutes, stirring occasionally.
- Once the pasta is cooked, reserve 1 cup (tea) of the cooking water.
- Now you will need to do everything very quickly: drain the water, transfer the pasta to the skillet with the hot bacon (at this moment with the skillet still off the heat), add the eggs and mix well – the idea is that the heat of the pasta cook the eggs, forming a cream. Return the skillet to the heat very low and gradually add the reserved cooking water, stirring with a spatula for a few minutes (approximately 4/5 minutes) until a thick sauce forms.
