- Recipe
- Spaghetti (or other pasta of your choice)400 g
- Extra Virgin Olive Oil to taste
- Bacon or minced guanciale150 g
- Egg Yolk5 unit(s)
- Grated Parmesan or Pecorino100 g
- Black pepper to taste
- Cooking water200 ml
- More Parmesan to top off to taste
- Put your pasta to cook in salted water.
- Heat a little oil and add the bacon. Leave until golden. When the pasta is cooked, add a ladle of the cooking water to the bacon and the cooked pasta. Mix.
- Mix the Parmesan cheese with the yolks and add to the hot pasta (do it off the flame so the yolk doesn't cook). It needs to form a cream, if necessary add another ladle of the cooking water.
- Put black pepper on top and finish with more parmesan. Serve immediately! Enjoy your food!
