- Spaghetti grano duro. to taste
- Tomato Extract4 tablespoon
- Salt. to taste
- Black Pepper. to taste
- Fresh Basil. to taste
- Extra Virgin Olive Oil. to taste
- Start by cutting the tomatoes in four, remove the middle part of the tomatoes, cut the onion in four and place the tomatoes, onions and unpeeled garlic cloves in a roasting pan. Season with plenty of oil and salt. Bake at 230° for 25/30 minutes or until everything is golden brown.
- After roasting, remove the roast from the oven and transfer everything to a blender, blend until smooth and place in a pan. Add the pan with the heat on, the sauce, a little water, black pepper and the tomato paste. Mix until you get a thick and fluid sauce. Fix the seasoning with salt and finally add the fresh basil.
- cook your spaghetti until it is al dent and remove from the pan with pasta tongs and throw it directly into the sauce letting some of the pasta cooking water drain. Mix and let the sauce toss into the dough. Serve hot with fresh basil leaves on top.
