- Spinach1 cup
- Eggs3 unit(s)
- Tapioca1/2 cup
- Oat flour1/2 cup
- Oil1/3 cup
- Salt and Black Pepper to taste
- Corn1 cup
- Milk2 cup
- Shredded chicken500 g
- In the blender, beat the spinach, 1 cup of milk, the eggs, the tapioca and oat flour, the oil and the salt and the dough is ready.
- Grease a skillet with olive oil and place 1 ladle of the dough and move the skillet to form a disk! The dough makes 20 pancakes.
- Fill the pancakes with the shredded chicken.
- In a blender, beat the sauce with 1 cup of milk, season with salt and black pepper and cook in the pan until it thickens.
- Place the ready-to-eat cream of corn over the already stuffed pancakes, finish with grated cheese and serve.
