- Finely flaked oatmeal, you may use a little more or less, add it little by little until it becomes a dough that doesn't stick to your hand.3 tablespoon
- Seasonings to taste, black pepper0 to taste
- Cook the sweet potato, mash it and in a bowl, mix the slightly beaten egg, seasonings to your liking and gradually add the oatmeal.
- Then form small balls and press lightly with your finger to feed the surface of the gnocchi.
- With the skillet already with the modeled gnocchi, heat a skillet and drizzle with olive oil, arrange the gnocchi and let them brown slightly on one side and turn to love the other.
- Reserve and you can serve with the sauce you prefer. I made a very fresh tomato and parsley rustic sauce.
