- Tagliatelle “fresh”500 g
- “Fresh” Parsley1 unit(s)
- Grana Padano to taste
- Salt to taste
- unsalted butter2 tablespoon
- Bring water to a boil with a drizzle of oil and salt. "Amount that covers all the noodles" after opening boil I leave it for 15 minutes.
- Between two sieves, take the bunch of parsley in the oven at a temperature of 180 degrees for 6 minutes, turn the parsley and leave it for another 4 minutes.
- Remove the parsley from the oven and wait for it to cool. Pass through a very fine sieve.
- After the pasta is cooked, drain, add 2 tablespoons of butter, serve on plates, add the dehydrated parsley and cheese. If necessary, adjust the salt.
