Wholemeal Penne with Shrimp and Zucchini

- Wholemeal Penne Pasta2 cup
- Clean shrimp250 g
- Olive Oil3 tablespoon
- Crushed garlic1 tablespoon
- Green zucchini, diced1 unit(s)
- Salt to taste
- Lemon juice1 unit(s)
- Diced Tomatoes1 unit(s)
- Chives to taste
- Basil (optional) to taste
- Season the shrimp (peeled and cleaned) with salt, black pepper and lemon.
- In a pan, bring water to boil to cook the pasta. Put a teaspoon of salt in the water, just to give it that sea flavor... :-) As soon as it boils, add the two cups of penne and let it cook to your preferred point. Al dente takes about 8 minutes.
- In a large skillet, pour the olive oil and when it starts to heat up, place the shrimp. Let it fry for about 2 minutes on each side and add the crushed garlic. Stir until the shrimp are done (depends on the size of the shrimp). If they are medium, the time is about 8 minutes. Keep stirring so the garlic doesn't burn.
- Add the zucchini and tomato chopped into small cubes. Mix well and keep on low heat until the zucchini is sautéed until al dente (maximum 5 minutes).
- Finally, drain the pasta and place in a deep dish. Then, put a spoon of denoliva oil over the pasta and stir to make it moist and fluffy.
- Pour the shrimp and zucchini stew over the penne and mix carefully. Finish with chopped chives and basil, if desired.
