- Roasted cashew flour100 g
- Melted Ghee or Coconut Oil50 g
- Pinch of salt1 to taste
- *Pasta* 100g of toasted cashew nut flour. 50g of melted ghee or coconut oil. Good pinch of salt.
- Mix everything together, form a 17cm shape with a removable bottom and place in the fridge.
- *Cream* 3 egg yolks (60g) 200g of vegetable milk. 30g of corn starch 🌽. 60g of demerara or sweetener. 1/2 tea of vanilla extract. 300g of firm dulce de leche.
- Mix everything, except the dulce de leche, and bring to the fire until it thickens.
- When incorporated, turn off, put the dulce de leche and process with a mixer until smooth.
- Pour into the dough and return to the fridge.
- When firm, slice banana, put it on top, put a layer of demerará and macarique until it forms the golden cone.
- Serve yourself then.
