- Cooked cassava800 g
- Beef400 g
- Sour cream1/2 unit(s)
- Milk1/2 cup
- Butter3 tablespoon
- Onion1 unit(s)
- Olive oil1 to taste
- Mozzarella cheese1 to taste
- Desalt the charque and cook it in a pressure cooker for 25 minutes.
- After the beef jerky is cooked, pass it through the processor or shred it and set aside.
- Mash manioc with a potato masher, heat with butter, milk and cream. Taste the salt. Let it cook until it turns into a puree.
- Heat the olive oil with the sliced onion and fry the beef jerky.
- Mount a layer of the cream on a platter that goes into the oven, in the middle the fried beef jerky with onions and on top the rest of the Purée.
- Cover with slices of mozzarella and take to the oven to gratin.
