  • grated coconut160 g
  • demerara sugar (or sweetener)60 g
  • xylitol (or other sweetener)40 g
  • eggs4 unit(s)
  • coconut oil3 tablespoon
  • coconut milk (if it is too thick, reduce the amount and top up with water)250 ml
  • medium raw chopped carrots290 g
  • chemical yeast1 tablespoon
  1. First mix dry ingredients together with coconut, sugar, xylitol. Reserve.
  2. Now in the blender, beat the eggs, coconut oil, chopped carrots and beat for about 5 min.
  3. Then add the dry ingredients little by little and mix gently.
  4. Finish adding the yeast and mix again.
  5. Put it in a shape (note: the dough doesn't rise almost) so it can reach the edge of the shape.
  6. Bake in a preheated oven at 180° for 45 minutes or test with a toothpick.
  7. Let cool and unmold, you can line with greased parchment paper to unmold better.
