- grated coconut160 g
- demerara sugar (or sweetener)60 g
- xylitol (or other sweetener)40 g
- eggs4 unit(s)
- coconut oil3 tablespoon
- coconut milk (if it is too thick, reduce the amount and top up with water)250 ml
- medium raw chopped carrots290 g
- chemical yeast1 tablespoon
- First mix dry ingredients together with coconut, sugar, xylitol. Reserve.
- Now in the blender, beat the eggs, coconut oil, chopped carrots and beat for about 5 min.
- Then add the dry ingredients little by little and mix gently.
- Finish adding the yeast and mix again.
- Put it in a shape (note: the dough doesn't rise almost) so it can reach the edge of the shape.
- Bake in a preheated oven at 180° for 45 minutes or test with a toothpick.
- Let cool and unmold, you can line with greased parchment paper to unmold better.
