- Do you like 70% cocoa chocolate300 g
- Eggs6 unit(s)
- Xylitol or Demerara1/2 cup
- Preheat the oven to 200°C
- Place the eggs in the mixer and beat until tripled in size, beat a lot, it will form a very voluminous cream (+or- 6 minutes).
- With the mixer on, gradually add the demerara or xylitol.
- Melt chocolate in double boiler.
- Grease a mold with butter and cocoa or flour.
- Add the beaten eggs to the melted chocolate little by little, stirring gently so as not to take the air out of the eggs.
- Place in the oven for 25 minutes.
- Let it cool and put it in the fridge.
- Decorate to taste.
