- Olive oil1 cup

- Put 1 liter of water in a pan. Bring to a boil over high heat, when it starts to boil, add a teaspoon of salt and the potatoes. Let it cook for 4 minutes. Drain and Reserve. In a bowl, break the eggs, add the cream and milk. Mix well. In a medium nonstick skillet, heat the oil. Saute onion for 5 minutes. Add the cod and sauté for another 15 minutes. Season with salt and pepper. Add the chopped parsley. Add the potatoes and sauté for another 5 minutes. Drizzle the egg mixture into the skillet. Lower the heat well and cover. Let it cook for eight to ten minutes. Uncover and run a spatula on the side of the skillet to unglue. Make movements with the spatula so that the liquid from above falls on the sides of the pan. When there is no more liquid on top of the tortilla. Run the spatula around the edges again. Turn the tortilla over with the help of a plate. With a quick movement, turn in one go. Return the tortilla to the skillet and let it brown for another 10 minutes, always on low heat. Transfer to a bowl and your recipe is ready. 😋😋😋 Tip: You can also bake in the oven. Just grease a refractory with olive oil, add the egg and cod mixture and bake in a preheated oven at 180 degrees for 20 minutes.
