- Coconut Flour or Almond Flour2 cup
- Coconut Sugar or Xylitol or Demerara Sugar8 tablespoon
- Chemical Baking Powder2 tablespoon
- Bananas cut into slices8 unit(s)
- Cinnamon powder to taste
- In a bowl, beat the eggs until foamy. Add the flour and sugar or xylitol. Mix initially with a spoon and then knead with your hands. Finally, add the yeast. In a greased shape with coconut oil (I used a removable background shape), mold the dough on the bottom and sides of the shape. Stuff with sliced bananas sprinkled with ground cinnamon and more sugar, if desired.
- With the rest of the dough, make rolls and distribute over the bananas, forming a square.
- Bake in a preheated oven at 200 degrees for approximately 15 minutes.
- Note: My pan is large, so I made “one and a half recipe.
