- Demerara sugar5 tablespoon
- Xanthan Gum1.30 g
- Frozen berries1 cup

- Prepare the dough ingredients: - Almond flour - Coconut oil - Brown sugar - Clear - Sicilian lemon (zest of 1 unit only) Prepare the cheese ingredients: - ricotta cream - Vanilla bean - Sprinkled demerara sugar (1 tablespoon) - Juice of 1 lemon (1 tablespoon) - Xanthan gum (1.30g) Prepare the syrup ingredients: - Frozen red fruits - Demerara sugar (4 tablespoons) - Cinnamon sticks - macerated juniper seeds - 1 piece of 2 to 3 cm of peeled ginger Preheat the oven to 200 degrees, mix the dough ingredients and place in a small roast with a removable bottom. Bake the dough for 15 min in the oven. Remove and let cool. Mix cream cheese ingredients except xanthan gum and set aside. Prepare the syrup in a frying pan by adding the sugar, the fruits and the spices and stir until it forms a syrup. Add the xanthan gum to the cream and assemble the cheesecake and place in the fridge. Unmold when ready to serve and cover with syrup.
