- Cooked and shredded chicken breast (you can cook with vegetables or just in water and salt)1 kg
- Chicken broth300 ml
- Extra virgin olive oil2 tablespoon
- Chopped Onion1 unit(s)
- Grated garlic cloves3 unit(s)
- Chopped tomato1 unit(s)
- Tomato sauce3/4 cup
- Can of drained peas1 unit(s)
- Cup of cottage cheese1 unit(s)
- Pitted olives, green smell, salt and pepper to taste
- Wheat flour500 g
- Grated Parmesan Cheese50 g
- Unsalted Margarine at room temperature300 g
- Salt5 g
- Gem1 unit(s)
- Start with the filling, to allow time to cool. In a pan, sauté onion in oil until translucent.
- Add the garlic, fry a little and add the tomato. Let the tomato fall apart. Add half of the tomato sauce, the olives and the chicken, mixing everything together.
- Add the cooking broth little by little, to moisten the chicken, until it becomes creamy to your liking. Then add the peas and the rest of the tomato sauce. Mix well.
- Add 1 tablespoon of curd and mix.
- Fix the salt and pepper and finish with the green smell. Reserve.
- For the dough, use a large bowl to facilitate homogenization. Add the flour, grated cheese and salt. Mix everything and finally add the margarine. Squeeze with your fingertips until homogenized. Do not knead the dough! It cannot develop gluten, otherwise it will not fall apart in the mouth.
- Shape into a ball and let rest in the fridge for 30 minutes.
- Forre a 22 cm false bottom shape with 2/3 of the dough (divide into three equal parts and use 2 pieces). Make holes in the bottom. Put the cold stuffing and make a layer with the rest of the cottage cheese over everything.
- Take the remaining dough, open it with a rolling pin (or bottle, if you don't have one) on a plastic sheet (to make it easier to transport) without leaving it too thin and cover the filling by closing the pie. Disassemble the yolk by stirring with a fork and brush it over the dough.
- Bake in a preheated oven at 180°C for about 40 minutes or until golden. Wait for the form to cool, unmold and serve immediately. Enjoy your food!
