- Wheat flour2 cup
- Cold cubed butter150 g
- Salt1 teaspoon
- Cold water5 tablespoon
- Sour cream200 g
- Milk1/2 cup
- Egg4 unit(s)
- Sliced leek2 unit(s)
- Cooked ham1/2 cup
- Cottage cheese1 cup
- Grated Parmesan Cheese1/2 cup
- Salt, pepper and nutmeg to taste
- For mass
- In a bowl, mix the flour and salt. Make a hole in the middle of the mixture, add the cold butter cut into cubes and with your fingertips, mix without kneading the dough, forming a kind of “farofa”;
- Add the water little by little, until the dough becomes smooth and homogeneous. Make a thick disc, wrap in plastic wrap and refrigerate for 30 minutes;
- Preheat the oven to 200ºC. Open with the roll and with the help of plastic film and have it on a quiche roast of approximately 24 cm. Cut the excess dough around the edges and, with the help of a fork, poke holes along the entire length of the dough. Place in the freezer for 10 minutes;
- Place in the oven for 30 minutes. Remove the dough from the oven and reduce the temperature to 180ºC;
- For the filling
- In a blender, add the eggs, milk, curd and cream. Beat until you get a homogeneous cream. Transfer to a bowl;
- Add to the mixture, the cooked ham cut into strips, the leek, the nutmeg, salt and pepper;
- Transfer the stuffing into the dough and place the grated Parmesan cheese on top. Bake in the oven for about 30 minutes or until golden. Remove from oven, garnish with parsley and chives.
