- White rice (raw)1 cup
- Boiling water2 cup
- Egg3 unit(s)
- Oil1/2 cup
- Sugar1 cup
- Baking powder (chemical)1 tablespoon
- Vanilla essence1 coffee spoon
- Bahia Orange1 unit(s)
- Put the rice in a bowl and add the boiling water. Leave to soak for 12 hours.
- Drain the rice and place in a blender. Add the eggs, sugar, oil, vanilla essence and beat for 3 minutes.
- With the blender off, add the yeast and the zest of a Bahia orange (the Bahia orange is much more aromatic and not bitter). Stir with a spatula.
- This recipe yields a small cake shaped like an English cake. If you want to make a large, pudding-shaped cake, double the recipe.
- Grease a loaf pan with oil and rice flour (you can sprinkle with granulated sugar too). Put the cake dough.
- Bake in a preheated oven at 180 degrees for 30-40 minutes.
