- Put the chicken to cook in the pressure cooker and season with salt, paprika, chicken broth and Bahia seasoning. After cooking, shred the chicken and set aside. Important: do not throw the chicken cooking water away!
- While the chicken is cooking, start preparing the ingredients you will use to decorate the couscous. Boil the egg and then cut it into slices. Also cut the peppers into slices (I used red and yellow). And cut a tomato into strips. Use a mold with a hole in the centre, grease it with oil and then distribute the peppers, tomato and egg all around the mold and set aside.
- In the pan, sauté the onion, garlic, and a little pepper cut very small, with a spoon of butter. Add the corn, the grated carrot and then the shredded chicken. Let it sauté a little, then add the chicken cooking water.
- When it starts to boil, add 2 cups of corn flour and a cup of seasoned farofa. Adjust the salt and seasonings, always mixing well.
- As soon as you turn off the fire, transfer the mixture to the mold, being careful not to break the decoration, press well and wait to cool down to be able to unmold.
