- Wheat for kibbeh1 cup
- Pumpkin/Cabotia Strawberry2 cup
- Onion1 unit(s)
- Lemon (juice)1/2 unit(s)
- Salt to taste
- Black pepper to taste
- Parsley to taste
- Mint to taste
- Put the wheat in a bowl and with water to hydrate for 15 minutes.
- Meanwhile, sauté onion and garlic in olive oil, then add chopped pumpkin. Add a cup of water and let it cook until the pumpkin is soft. Knead until it becomes a puree.
- Drain the wheat, add the puree and the rest of the ingredients. Mix until you get a dense, moist mass.
- Transfer to a refractory, make the traditional cut of the kibbe (in checkerboard) and drizzle with olive oil.
- Bake in a preheated oven at 200° for 25 minutes.
