- Large eggplants3 unit(s)
- Can of tomato sauce1 unit(s)
- Coriander bunch cut into small pieces1 unit(s)
- Sliced Pitted Olives1 unit(s)
- Sliced Mozzarella Cheese300 g
- Sliced ham300 g
- Spoons of olive oil2 tablespoon
- Cut the eggplant into slices.
- In a refractory rectangular roast, place the two tablespoons of olive oil and a little tomato sauce on the bottom.
- Then place a layer of eggplant.
- Cover with tomato sauce, sprinkle with olives and cilantro.
- Then place a layer of ham.
- Add a layer of eggplant, cover with tomato sauce and top with a layer of mozzarella cheese.
- Repeat steps 3, 4 and 5 to form two more layers.
- Place catupiry cheese on top, to taste, and cover the roast with aluminum foil.
- Place in the oven for about 30 minutes to cook.
- After that, remove the foil and leave for another 5 to 10 minutes to brown.
- Serve it hot.
