- Mozzarella for gratin to taste
- Boiled Chayote4 unit(s)
- Milk or sour cream1/2 cup
- Tapioca Gum4 tablespoon
- Chopped Onion1 unit(s)
- Garlic4 unit(s)
- Salt, parsley, dehydrated garlic and onion to taste
- Olive oil to taste
- Cook the chayote in a little salted water. Drain the water WELL and hit the blender with 1/2 chopped onion+ 2 egg yolks+parmesan cheese+milk or cream.
- Brown the other half of the onion and garlic in the oil and throw this sauté in the blender (wait to cool a little).
- Finally, pour the dough into the pan, add the tapioca + 2 snow whites and bake in a refractory greased with olive oil at 180 degrees.
- On top I used slices of mozzarella for fixings, leave for approximately 25 minutes in the oven or until golden.
