- Beat the eggs well so that they are aerated, season with salt and pepper.
- Cut the garlic very finely. Onion in julienne And diced tomatoes
- Sauté the vegetables in a straight skillet and add the eggs. Place a spoonful of butter on top of the egg and cover.
- When the sides of the egg begin to brown, take a plate and place it against the opening in the skillet. Turn the skillet upside down so that the tortilla lands on top of the plate and slide the tortilla back into the skillet again, place the cheese cubes on top of the tortilla.
- Cut the chives and separate the basil leaves. Repeat the process after the tortilla has browned on the other side and place it on the plate again, decorate as you wish and serve.
