- Salt and black pepper to taste
- Butter to taste

- Peel and cut the potatoes into medium slices and bring to the boil. Keep an eye out because they need to be cooked, but firm.
- Cut the pepperoni into thin slices and brown them with the onion.
- Beat the eggs with a fork or fouet and season with salt and pepper.
- Grease a skillet with butter, add the already cooked potatoes, the sausage arranged on top, the cheese and lastly the beaten eggs.
- Leave on low heat, cover and cook for about 8 minutes.
- With the help of a large plate, turn the tortilla over and place the side facing up in the skillet. Let it cook and brown until it is fully cooked and golden.
