- Chicken breast cut into medium cubes500 g
- Boiled Aipim2 cup
- Coconut milk1 cup
- Red bell pepper cut into small cubes1/2 cup
- Chopped Onion1/2 cup
- Chopped Garlic1 tablespoon
- Squeezed Lime1 tablespoon
- Chopped Parsley1 dessert spoon
- Palm oil1 tablespoon
- Olive oil1 dessert spoon
- Paprika1 teaspoon
- Sea Salt to taste
- Ground black pepper to taste
- Season the chicken with salt, pepper and lemon and set aside.
- In a pan heat the oil and brown the onion, garlic and bell pepper.
- Add the paprika, stir and add the chicken.
- Keep sautéing until the chicken is cooked.
- In a food processor beat the coconut milk and cassava, put this mixture in the pan with the chicken and incorporate.
- Add the palm oil and mix well. Cook for about 7 minutes over low heat, stirring constantly so as not to burn.
- Adjust the salt and finish with the parsley.
