- Boneless chicken breast cut into strips400 g
- Cooked white beans1 cup
- Chopped seedless tomato1 cup
- Squeezed Lime1/2 unit(s)
- Chopped Garlic1 tablespoon
- Chopped Onion1/4 cup
- Chopped fresh basil leaves1/4 cup
- Sea Salt to taste
- Olive oil1 tablespoon
- Ground Black Pepper to taste
- Grated Parmesan Cheese to taste
- Season the chicken with the lemon, half the basil, salt and pepper and leave to marinate in the fridge for 2 hours.
- Heat a non-stick frying pan and fry the chicken strips little by little until golden brown. Reserve.
- Heat more oil in a pan and brown the onion and garlic.
- Add the beans, season with salt and mix. Add the tomato and cook for 2 minutes.
- Return the chicken to the pan along with the beans and mix.
- Add the remaining basil, hit the salt and cook for another 1 minute.
- Serve with grated parmesan on top.
