- Chicken thighs and drumsticks1 kg
- Okra300 g
- Chopped Onion1 unit(s)
- Chopped Green Bell Pepper1/2 unit(s)
- Tomato sauce2 tablespoon
- Chopped Garlic1 tablespoon
- Vinegar2 tablespoon
- Chopped Coriander to taste
- Salt, paprika, smoked paprika, black pepper to taste
- Olive oil2 tablespoon
- I seasoned the chicken with salt, garlic, pepper, paprika and vinegar, left it marinating for 1 hour.
- In a pan I put 2 Tablespoons of olive oil, I put the seasoned chicken pieces and fried until they were very golden, I added the onion and peppers, I sautéed well, I added the tomato sauce and paprika, I added water until it covered all the chicken, I covered the pan and I cooked over high heat for 20 minutes.
- I washed the okra and dried them all, cut them into large pieces and cut some in half to use for decoration.
- In a frying pan with a spoonful of olive oil, I browned the whole okra, removed it from the pan and set it aside, added the pieces of okra and sautéed until they were soft, you don't need to stir too much to avoid drooling, seasoned with a little salt, pepper and a few drops of vinegar . This stew is fast, 8 minutes is good.
- After 20 minutes of cooking, I reduced the chicken heat and added the okra, covered the pan and left for another 10 minutes. I turned off the fire, finished with cilantro and added the whole okra.
