- To make this drumstick recipe, start by deboning the meat. To do this, make a cut in the meat along the bone and then scrape it with the knife to separate it from the bone. Also cut off the cartilage, which will be at one end of the bone, and the excess fat. Keep the skin and season to taste with salt and pepper.
- Then beat the meat with a kitchen mallet. We do this so that the drumstick is more compact and all the same thickness, thus taking less time to cook.
- Then place the butter in a skillet over medium heat and fry the drumstick with the skin facing down. This way the skin will release the fat and get very crispy! Cook for 10 minutes, turn and cook for another 5 minutes.
- Turn off the heat when the thigh skin is crispy and the meat is golden brown. Remove to a plate with absorbent paper and let the excess oil drain for 1-2 minutes.
