- Tomato, onion, pepper and green smell to taste
- Garlic to taste
- Salt1 teaspoon
- Spices as desired to taste
- Color1 tablespoon
- Fine cornmeal1 cup

- Olive oil or oil0 to taste
- First, season the chicken overnight with all the seasonings described.
- The next day, take it to the fire to sauté in a large casserole, after golden, sprinkle 1 small spoon of coffee powder, mix to give that wonderful color without having to use the animal's blood.
- Add the tomato, onion, pepper and chopped green smell and wait for it to soften.
- Take everything to the pressure cooker with water until you cover the chicken and let it cook for 40 minutes.
- While the chicken cooks. Prepare the polenta. In a pan, sauté 1 clove of garlic with oil or olive oil of your choice, after adding water and 1 teaspoon of salt, as soon as it starts to boil, pour the cornmeal added into 1 glass of water and stir slowly until it thickens.
- Okra Cut the okra diagonally and take it to give a little color in the oil or you can make it mincemeat in the same sauce as the chicken after it is ready. It's a delight too.
- A white and fluffy rice is a great accompaniment to close with a golden key.
