- for the chicken In a pressure cooker, put the oil, the onion and let it fry until translucent, add the other ingredients and fry a little more. Add the Franc in pieces and fry well, until golden. Add 700 ml of water and let it boil under pressure for 20 minutes or until it softens, if necessary add more water. Uncover and let it boil until the water dries up and there is a thick broth at the end.
- For the polenta. In a pan, place the onion and oil and fry until the onion is transparent, add the other seasoning ingredients and fry a little more. Add 1 1/2 liter of water and bring to a boil. To add the knitting or polentine, dissolve it in a container with cold water, and very slowly turn it over in the pan of boiling water with the seasonings. Observe the cooking point if it is to your liking, softer or firmer. Let it cook a little longer and you're done. Serve hot and very soft.
