- Boneless chicken thigh1 kg
- Olive oil3 tablespoon
- Capers2 tablespoon
- Pitted Olives3 tablespoon
- Cherry Tomatoes200 g
- White wine1 cup
- Can of chopped tomato1 unit(s)
- Salt and pepper to taste
- medium chopped onion2 unit(s)
- Minced garlic2 unit(s)
- Bay leaves3 unit(s)
- Basil Leaves to taste
- Thyme1 teaspoon
- In a bowl, place the thighs, wine, onions, bay leaves, garlic, thyme and salt and pepper. Mix and leave to marinate in the fridge for an hour.
- Remove from the fridge and strain the marinade. Reserve the liquid.
- Heat a pan with the oil and brown the thighs little by little. in the same pot Add the thighs and what's left of the marinade. Cook for 20 minutes over medium heat.
- Add the can of peeled tomatoes. Check salt and pepper. Cook for another 20 minutes.
- Add the cherry tomatoes, olives and capers. Cook for another 5 minutes. Turn off the heat and finish with chopped basil.
