- Small chicken breast fillets300 g
- Onion cut into half moons3/4 cup
- Small lemon squeezed1 unit(s)
- Sweet paprika1 teaspoon
- Minced Garlic1 teaspoon
- Chopped fresh rosemary to taste
- Ground Black Pepper to taste
- Olive oil1 tablespoon
- Salt to taste
- Cooked parboiled rice1.5 cup
- Cooked and seasoned black beans1.5 cup
- Season the chicken with the lemon, salt, pepper, paprika, garlic and rosemary. Leave it in the fridge for 1 hour to absorb the seasoning.
- Heat half the oil in a nonstick skillet and grill the chicken fillets until cooked. Reserve.
- In the same skillet add the remaining olive oil and sauté the onion with a little salt until it begins to wilt.
- Serve the chicken with the onion on a plate along with the rice and beans.
