- Olive oil1 cup

- Flake Couscous1 cup
- Raisins1 to taste
- Herbs of your choice (I used rosemary, basil, black pepper, chives and cilantro) Mix everything (apart from the couscous and raisins) and place it over the bird. I left it on for 8 hours or so. I covered the seasoned chicken with aluminum foil and put it to bake on medium heat for 50 minutes, then I removed the foil, put it on high heat and waited for it to brown. Oh! For the stuffing I used boiled couscous, mixed with parsley, raisins and mozzarella on top. It's perfect, it's not dry.
