- Cut the gizzards into three pieces, trying to always go through the white part. Season with salt, pepper and sweet paprika (or paprika).
- Cut all vegetables into small cubes.
- In a pan, briefly sauté the garlic. Add the onion and bell pepper and let it brown slightly. Add the tomato and let it brown a lot, until everything is a rustic sauce.
- Add the gizzards to the pan, mix briefly and let them brown. When you practically run out of water and the gizzards are golden in color, add water until the gizzards are covered. Lower the heat to where you want and let it cook until it's soft (if you need to add more water, add it). The gizzard has to be soft and greased.
- Finish with cilantro, if you like.
