- Chickpeas400 g
- Chopped Carrots1 cup
- Chopped Onion2 tablespoon
- Chopped Pepper2 tablespoon
- Chopped cucumber1 cup
- Chopped Tomatoes2 tablespoon
- Chopped parsley1 cup
- Olive Oil1/4 cup
- Lemon juice2 tablespoon
- Salad dressing1 tablespoon
- Black pepper to taste
- Soak the chickpeas for 12 hours, wash and change the water. Cook under pressure for 20 minutes, drain the cooking water and set aside.
- In a bowl place the chickpeas, carrots, cucumber, tomato, onion and chopped peppers.
- Put olive oil, lemon juice, pepper, salad dressing. Stir very well mixing everything. Finally, add the chopped parsley. Serve cold.
