- medium chayote1 unit(s)
- Wholemeal yogurt170 g
- Salt to taste
- Extra Virgin Olive Oil to taste
- Zaatar1 coffee spoon
- Mint (branches)3 unit(s)
- Peel the chayote completely, divide it into two parts lengthwise and slice it very thin (1 to 2 mm) with a knife or mandolin.
- Blanch the chayote slices in salted water for 3 minutes (See tip) and drain well in a colander.
- In a bowl mix yogurt, freshly chopped mint and Zaatar (can be cumin). Add the sliced chayote and mix until everything is incorporated.
- Serve chilled with the olive oil on top, a pinch of zaatar and a few mint leaves. It goes very well with a salad of leaves, in a sandwich, with leaf bread or even alone as a starter.
