  • medium chayote1 unit(s)
  • Wholemeal yogurt170 g
  • Salt to taste
  • Extra Virgin Olive Oil to taste
  • Zaatar1 coffee spoon
  • Mint (branches)3 unit(s)
  1. Peel the chayote completely, divide it into two parts lengthwise and slice it very thin (1 to 2 mm) with a knife or mandolin.
  2. Blanch the chayote slices in salted water for 3 minutes (See tip) and drain well in a colander.
  3. In a bowl mix yogurt, freshly chopped mint and Zaatar (can be cumin). Add the sliced chayote and mix until everything is incorporated.
  4. Serve chilled with the olive oil on top, a pinch of zaatar and a few mint leaves. It goes very well with a salad of leaves, in a sandwich, with leaf bread or even alone as a starter.
