- Corn kernels4 cup
- Cherry tomato cut in half1/2 cup
- English cucumber in small cubes1 unit(s)
- Pitted black olives, halved1/2 cup
- Crumbled Feta Cheese1/2 cup
- Chopped chives3 tablespoon
- bunch of chopped parsley1/2 coffee spoon
- Olive oil1/4 cup
- Apple Cider Vinegar Soup2 teaspoon
- Lemon juice and zest1 unit(s)
- Minced Garlic Clove1 unit(s)
- Kosher salt and ground black pepper1 to taste
- Boil the corn for 2-3 minutes, until soft and crispy.
- Drain and let cool until easy to handle.
- Cut the beans and place them in a large bowl.
- Add the tomatoes, cucumbers, olives, feta cheese, chives and parsley.
- In a small jar, add all sauce ingredients only and shake to boost.
- Drizzle the dressing over the salad and mix.
- Now just serve
