- Wash all the vegetables well and start by chopping the eggplant into small cubes. As you chop, leave it in the water so it doesn't darken. When finished, change the water and add the vinegar, filling the rest with water until the eggplant is covered. Add a teaspoon of salt and set aside for about 1 hour.
- Chop the peppers and onions into small cubes and set aside.
- Also chop the tomato into cubes and before adding the peppers and onion, squeeze between your hands to remove excess water.
- Cut the olives and the green smell to taste into small pieces and add to the vegetables.
- After soaking the eggplant, drain the water with vinegar and pass another clean water, letting it drain afterwards. Squeeze the eggplant in your hands and add to the rest of the vegetables.
- Stir well and season with salt and oil.
