- Quinoa Grains1 cup
- Chopped small tomato1 unit(s)
- Squeezed lemon1 tablespoon
- Olive oil2 tablespoon
- Salt and pepper to taste
- Water2 cup
- Chopped red and yellow peppers1 to taste
- Chopped red onion1 unit(s)
- Parsley and chives, chopped to taste
- Fresh Basil to taste
- The most complex and important part of the recipe is about preparing the quinoa. Wash and drain a few times to remove saponin and other impurities.
- Then put two cups of water to boil. Once it boils, add the quinoa and salt and let it boil for 10 to 15 minutes. You'll know the quinoa is cooked when it turns transparent with white lines around the grains. Drain and rinse under running water to stop cooking and let cool.
- To assemble the salad, place the quinoa on a platter and mash it with a fork so the seeds are very loose.
- Mix the salad ingredients and finish with the seasonings: lemon, olive oil, salt and pepper. Mix everything and at the end include the basil leaves at will!
