- Cut the eggplant into cubes, and put it in water with vinegar so it doesn't darken.
- Drain this water, and put it to a quick boil in salted water.
- Drain again and set aside.
- Add the oil, garlic, onion, tomato and olives. Saute everything.
- Cut the peppers into strips and sauté together just to wilt.
- Combine the sautéed with the eggplants
- Finish with vinegar and black pepper. If you prefer, add cilantro.
