- asterix potato [the one with the pink skin]1 kg
- Boiled Egg5 unit(s)
- Natural Yogurt1 unit(s)
- Light Mustard100 g
- Chopped Onion1 unit(s)
- Sliced Cucumber Pickles1 cup
- Chopped chives1 cup
- White Vinegar1 tablespoon
- Cucumber Preserve Water1 tablespoon
- Salt to taste
- Pepper to taste
- Peel and cut the potatoes into 4 and then into thin slices.
- Cook the potatoes in salted water until they are cooked but still firm. Drain the water and reserve the potatoes.
- While the potatoes cook, place the chopped onions in the bowl where the salad will be served. Season with a little salt to make the onion less crunchy. Reserve.
- Cut the hard-boiled eggs so that the white is separated from the yolk.
- In a bowl, prepare the salad dressing. Start with the boiled egg yolks and mustard, mix well with a fork until smooth.
- Then add the yogurt, vinegar, pickle and pickle water. Mix well
- Season the sauce with salt and pepper, preferably freshly ground.
- Place the boiled potatoes and egg whites in the large bowl and cover with the sauce.
- Mix well so that every part of each potato slice is covered in this delicious yellow sauce.
- Ready to attack.... It goes great with sauerkraut, sausage, steak, sirloin and whatever the imagination sends.
