- Potato500 g
- Carrot2 unit(s)
- Eggs3 unit(s)
- Corn1 can(s)
- Mayonnaise4 tablespoon
- Lemon1/2 unit(s)
- Green Olives to taste
- Parsley to taste
- Chop the potatoes and carrots. Place in a pan and bring to a boil in water along with the eggs.
- Once cooked, drain and reserve.
- Peel the eggs, separate the yolks and chop the whites, set aside
- In a refractory place the boiled yolks and a little of the boiled potatoes. Knead well and add the mayonnaise. Mix and add the lemon juice, parsley and corn. Shake well
- Add the egg whites, olives, carrots and the rest of the cooked potatoes, mix well and refrigerate until serving.
