- Moroccan Couscous1/2 cup
- grated carrot1 unit(s)
- Diced Zucchini1 unit(s)
- Chopped Onion1/2 unit(s)
- Minced Garlic Cloves2 unit(s)
- Bay leaf1 unit(s)
- Olive oil2 tablespoon
- Salt to taste
- Pepper to taste
- Cinnamon to taste
- Sweet paprika to taste
- Nuts of your choice1 tablespoon
- Boiling water1 cup
- In a pan, heat 1 tablespoon of oil and sauté the onion and garlic until lightly browned. Add the bay leaf.
- Add the carrots and season with salt, pepper, paprika and cinnamon (gives an amazing taste). Let it cool for about 3 minutes.
- Add the zucchini and sauté another 3 minutes.
- Turn off the fire. Add the couscous and adjust the salt. Add 1 tablespoon of oil and the boiling water. Mix well and cover the pan for 5 minutes.
