- your pasta of choice (I used the gluten-free and vegan spinach noodles)300 g
- seedless cucumber, thinly sliced1 cup
- sliced cherry tomato1 cup
- chopped red onion1/4 cup
- parsley2 tablespoon
- Sauce: Avocados2 unit(s)
- Lemon juice1 unit(s)
- salt1 teaspoon
- pepper1/2 teaspoon
- garlic1 teaspoon
- black pepper1/4 teaspoon
- fresh parsley1/4 cup
- chopped coriander2 tablespoon
- SAUCE Blend the avocado, lemon juice, salt, pepper, garlic powder, fresh parsley and cilantro in a blender
- Cook the pasta in water and salt.
- Drain the pasta and drizzle it with a little oil.
- Add all remaining ingredients and sauce.
- Mix carefully and serve cold!
